Abstract
Bu çalışmada Un sanayisinde iş sağlığı ve güvenliği uygulamaları ele alınmış olmakla beraber, öncelikle, gıda alanına giren un sanayisinde meslek hastalıkları ve iş kazaları hakkında genel bilgiler verilmektedir. Dünyada iş sağlığı ve güvenliği temel uygulamalarının ardından Türkiye de iş sağlığı ve güvenliği uygulamalarına yer vermeye başlamıştır. Bu gelişmelerin uygulanması ile ülkemizdeki küçük ve orta ölçekli gıda üretim işletmelerinde ve un üretim işletmelerinde iş sağlığı ve güvenliğinin anlaşılması, planlanması, uygulanması, geliştirilmesi, meslek hastalıklarına ve toz patlamalarına karşı korunmanın sağlanması konuları ele alınmaktadır. Bu çalışmanın temel amacı, un fabrikalarında dikkat edilmesi gereken faktörleri, toz patlamaları ile ilgili eğitimleri ve bu konuda ele alınan önlemleri ele almaktır. Avrupa ülkelerinde son zamanlarda yapılan toz patlaması eğitim uygulamaları nedeniyle, çalışanlara zorunlu eğitim verilmesi ve çalışan bilincinin artırılması amacıyla uygulamalara yer verilmiştir. Ayrıca bu eğitimler için kullanılan eğitim yönetim sistemi altyapısının kullanılması nedeniyle Türkiye'de alınan eğitimlerin uygulanmasını kolaylaştırmaktadır. Bu uygulama sayesinde eğitim oluşturma ve sistem altyapısında açık kaynak kodlu bir eğitim yönetim sistemi ile daha güvenilir ve sağlıklı bir iş sağlığı ve güvenliği sistemi uygulanabilmektedir. Un fabrikalarında ve un üretilen alanlarda iş sağlığı ve güvenliği uygulanmasının araştırılmasından önce gıda üretimi konusunda genel bir araştırma yapılmış ve yeni bilgiler elde edilmiştir. Un sanayisinde toz patlamalarının tarihçesi ve toz patlamaları konusu, un değirmeni çalışanlarının un tozuna maruz kalmasının sonuçları referans alınarak ayrıntılı olarak tartışılmaktadır.

Abstract
In this study, although occupational health and safety practices in the flour industry are discussed, first of all, general information about occupational diseases and work accidents in the flour industry, which is in the field of food, is given. Following the basic practices of occupational health and safety in the world, it has started to include occupational health and safety practices in Turkey. With the implementation of these developments, the subjects of understanding, planning, implementing, developing occupational health and safety in small and medium-sized food production enterprises and flour production enterprises in our country, and providing protection against occupational diseases and dust explosions are discussed. The main purpose of this study is to discuss the factors to be considered in flour mills, the trainings on dust explosions and the precautions taken in this regard. Due to the dust explosion training practices carried out recently in European countries, practices have been included in order to provide compulsory training to employees and to increase employee awareness. In addition, due to the use of the education management system infrastructure used for these trainings, it facilitates the implementation of the trainings received in Turkey. Thanks to this application, a more reliable and healthy occupational health and safety system can be implemented with an open source code training management system in training creation and system infrastructure. Before investigating the application of occupational health and safety in flour factories and flour producing areas, a general research was conducted on food production and new information was obtained. The history of dust explosions in the flour industry and the subject of dust explosions are discussed in detail with reference to the consequences of flour mill workers' exposure to flour dust.
